Pie
1 baked 10 inch pie shell
3½ cups milk (whole)
½ cup sugar
¼ tsp. salt
2½ T flour, heaping
1½ T cornstarch, heaping
3 egg whites
1 tsp. vanilla
1½ cups fresh grated coconut

Topping
8 oz. Cool Whip
handful of coconut

Directions:
Directions:
Mix flour, cornstarch, salt and sugar with enough milk to make thin paste. Heat the rest of the milk to boiling and add paste and cook till thickened. Beat egg whites and add to pudding and mix. Add vanilla. After pudding is colled, add 1½ cups coconut. Pour into baked pie shell. Put in frig. overnight. Before serving, top with Cool Whip and sprinkle with fresh coconut.
