Peel potatoes. Cut into 1/4 inch strips. Wash them in cold water and rinse and repeat until water runs clear. Dry potatoes until completely dry. there should be no moisture on the potatoes. Preheat oil in a deep fryer to 320F. Fry potatoes in small batches for about 8 minutes. They will not be cooked. Drain on paper towels and let sit for 20 minutes. Raise heat in the fryer to 375F. Fry for 2-4 minutes until golden browned. Drain on paper towels. Serve hot with either ketchup or as the Belgians, mayonnaise.
