8-oz brick sharp cheddar cheese, cold
8-oz brick Monterey jack with peppers cheese, cold
8-oz brick cream cheese, cold
1/2 c olive oil
1/2 c white wine vinegar
1/4 c fresh lime juice
1/2 of a 7.5-oz jar of roasted sweet red peppers, drained and chopped
3 green onions, minced
3 T chopped fresh parsley
3 T chopped fresh cilantro
1 tsp white granulated sugar
1/2 tsp salt
1/2 tsp fresh ground black pepper

Slice each brick of cheese in half vertically. Cut each slice into 1/4-inch-thick squares (like pats of butter). Line a glass or other nonreactive serving dish with the cheese pats, alternating each type to create a variegated appearance — stacking the pats sideways, wide surfaces touching. Whisk the oil, vinegar and lime juice until emulsified; add remaining ingredients. Pour marinade over cheeses in dish. Refrigerate for 8 hours or overnight before serving. Using a spreader knife, serve with cracker of choice (I ONLY use Triscuits).
