1 3/4 pounds baby carrots
2 medium red onions cut into wedges
1 tablespoon olive oil
salt and pepper

1. Preheat oven to 450º.

2. On a rimmed baking sheet, toss carrots and onions with oil and season with salt and pepper.

3. Roast on middle rack until tender and onions are golden, about 20 minutes, stirring halfway through.
