1 cup cornmeal
1 1/4 cups (310 mL) Milk
1 cups all-purpose flour
4 tsp baking powder
1 tsp salt
1 cup sugar
1 eggs
1/4 cup butter, melted
1 tsp vanilla extract
1/4 cup jelly, divided to make surprise use a variety of Jelly

Directions:
Directions:
Sift flour with sugar, baking powder and salt; stir in cornmeal. Beat eggs slightly, add milk and melted butter. Combine all until moist. For muffins pour into well greased muffin pan. Fill muffin cups half full of batter. Drop 1/2 to 1 teaspoon of jell in center of batter. Add more batter to fill cup 2/3 full. Bake at 425 º for 15 to 20 minutes.
