New Orleans Vietnamese Pho Recipe

Ingredients: Beef bones. 1 large white onion 8 inch Daikon 1 big piece of ginger Beef broth 2 seasoning packets of pho Hoa (ho-ah)- Has star anise, coriander seeds, cinnamon, etc. NY strip for the meat cut up super thin or Chicken if making chicken pho 2 Pho bullion cubes (pho ga or Pho bo) Ga is chicken. Bo is beef.
For after the soup is prepared: Fresh bean sprouts Thai basil Freshly sliced Jalapeno Freshly Chopped cilantro 1 lime sliced up Freshly chopped green onion Fish sauce

Directions:Rinse beef bones with warm water and then scrub with handfuls of salt while rinsing under tepid water. Be sure to trim bones as sometimes they still have hair on them. Rinse w/ cool water. Throw in a big pot. Cut up an onion and about an 8 inch daikon.
Get a big piece of Ginger (I like ginger). Skin on. Poke holes w a fork. Microwave for 15 seconds (releases oils). Cut in large chunks. Throw that in the pot.
Fill the pot w/ equal parts water and beef broth. You want enough water to cover the bones and about an inch and a half extra.
Then buy pho Hoa (ho-ah). It's the seasoning packet. Has star anise, coriander seeds, cinnamon, etc. I sometimes buy 2. It comes w an herb bag to throw all the herbs in there. Put the Pho Hoa and its herb packet in after the water has boiled and you lower the heat to where it's just slightly bubbling.
Add pho bullion cubes.
Simmer boil for a minimum of 4 hours (ideally 6-8) and skim the fat off the top as it boils all day.
Prepare the noodles and put into s.erving bowls
Take NY strip and cut it up super thin because you will put it on top of the noodles raw and pour the boiling broth over it so it cooks the meat. Right before serving crank up the heat to get the broth really hot and boiling.
Add all the veggie fixings when the soup is served.
