1 egg
1/2 cup milk
1/4 cup canola oil or Crisco oil
1 1/2 cups all purpose flower
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
Use the left over jelly or an assortment of your favorite jellies

Directions:

Heat oven to 400 degrees
Grease medium sized 12 muffin capacity pan (or use muffin pan liners)
Beat egg and stir in milk and oil
Add remaining ingredients (except jelly) and stir until flour is moistened. The batter will be lumpy.
Fill muffin cups till 1/2 full
Add 1 teaspoon of jelly
Add additional batter till cup is 2/3 full
Bake 20-25 minutes or until golden brown
Immediately remove from muffin pan

This was a favorite of my children when we lived in Wyoming. They did not know what kind of jelly they would get as I used the last bit in a jar. It was my mother, Doris Shelton who gave me the idea as she grew up during the depression.
