Ingredients:  
Ingredients:  
3 Tablespoons butter
3 Tablespoons flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 14-ounce can chicken broth
6 3/4 inch rib or loin pork chops
2 Tablespoons oil
6 cups thinly sliced, peeled potatoes
1 medium onion, diced
paprika (optional)
fresh parsley leaves (optional)

Directions:
Directions:
In saucepan, melt butter.
Stir in flour, salt and pepper
Add chicken broth
Cook and stir constantly until it boils
Cook one minute.
Remove from heat
Set aside.

In skillet
brown pork chops in oil
season to taste with salt and pepper

In a greased 9 x 13 x 2 inch baking dish, layer potatoes and onion
Pour broth mixture over
Place porkchops on top
Cover and bake at 350º for 1 hour.
Unncover and bake 30 minutes longer,.Remove from oven.
Sprinkle with parsley and paprika if desired...
