Two (3-oz) pkg cherry or cranberry gelatin
2 c boiling water
15-oz can cranberry sauce (not the jellied version)
2 c chopped pecans
20-oz can crushed pineapple, drained
Large can mandarin oranges, drained

Directions:
Dissolve gelatin in hot water in a non-reactive mixing bowl. Add cranberry sauce, stirring until dissolved. Fold in the pecans, pineapple and mandarin oranges. Pour into an 8-1/2-by-11-inch dish and chill at least 3 hours.

Molded gelatin salads and desserts were a staple during most of the 20th century. Gelatin became a viable food product in the late 19th century, but only took off in popularity after Charles Knox created the first pre-granulated gelatin and sold it in dried sheets for combined use with hot water, vegetables and fruits. His wife Rose published the first gelatin cookbook. Sales and recipes exploded after the Jell-O Company merged with Postum Cereal, Inc., in 1925, continuing during the Great Depression and war years when food was scarce. Except for scrumptious holiday recipes such as this one, 21st century cooks have refocused on simple dishes made with fresh foods.
