Directions:
Preheat oven to 400 degrees
Rinse fish with water and pat dry with paper towel
Place tin foil on baking tray for easy cleanup
Place each fish on a separate piece of tin foil large enough to wrap it
Rub olive oil on fish and inside fish
Run minced garlic on inside of fish
Add lemon and onion slices to inside of fish
Season with salt and pepper
Wrap in tin foil and place on baking sheet
Cook for 20 minutes (for 1.5 pound fish) until fish is tender and flaky with a fork
Using tongs, pull the bones from the front (where head used to be) and pull up. The entire fish skeleton should easily come away.
You still need to watch for some straggler bones but it is mostly bone free!
Enjoy!

Personal Notes:
We found this recipe after we caught our fish at White Pines fishing. The kids caught their fish and we came home to eat it. It’s best when it’s fresh from the water and easy because Mary (who owns the pond) guts it for us!
