20-oz can crushed pineapple in heavy syrup plus water
3-oz pkg lemon gelatin
1 envelope plain gelatin
1/2 c water
2 or 4-oz jar of chopped pimentos, drained (to taste)
1 c mayonnaise
1 c chopped pecans
1 pt heavy whipping cream, whipped
8-oz pkg cream cheese, softened

Directions:
Drain pineapple but reserve the syrup. Combine reserved pineapple syrup with water to make two cups of liquid. Heat the liquid and add to lemon gelatin in a non-reactive mixing bowl. Stir to dissolve. Mix plain gelatin in a half cup cold water in another bowl; add to lemon gelatin mixture. Set in refrigerator until it begins to thicken.

Combine softened cream cheese, pimentos, pineapple, mayonnaise and pecans. Gradually fold into slightly thickened gelatin, mixing well to blend. Fold in the whipped cream. Pour into a mold or a square pan. Place in refrigerator and chill until firm, about 3 hours. Cut into blocks and serve on lettuce.
