1 qt water
2 c white granulated sugar
2 c fresh mint leaves, cut fine
Juice and rind of 3 lemons (about 6 T juice)
Drop of green food coloring, optional

Directions:
Directions:
Boil sugar in the water for 10 minutes to make a simple syrup. While syrup is boiling, carefully wash and dry the mint leaves. Cut with scissors and measure out 2 cups into a large heat-resistant container. Bruise the mint leaves when adding the lemon juice and rinds. Pour the boiling syrup over the mixture and let stand for several hours or overnight. Strain. Add a drop of food coloring to the liquid if desired. To serve, fill glass with crushed ice. Add equal parts mint syrup and ginger ale.
