8 med russet potatoes , 4 Tbsp melted butter, 3 Tbsp salt (divided(, 1 cup heavy cream, 1 Tbsp vegetable oil, 1 lb. ground beef, 1 1/2 cup diced yellow onion, 1 1/2 cup diced red bell pepper, 3 Tbsp Italian seasoning, 1 tsp black pepper, 4 Tbsp flour, 2 cup beef broth, 2 cup frozen peas/carrots, 2 tsps. smoked paprika

Oven 400 ...bake potatoes 45-60 minutes. Reset oven to 375.....Cut the top off the potatoes and scoop out skins to 1/4 inch. Add the melted butter, 1/2 tsp salt and cream to the scooped out potatoes and mash. Put in a pastry bag. Brown the burger and add all additional ingredients and cook well. Add the flour and stir into the mixture and add the broth and simmer. Add the frozen peas and carrots and spoon into the potatoe skins and pipe the mashed potatoes on the top. Bake in 375 oven for 20 minutes
