1/4 cup butter
3 pounds of lobster meat
3 cups homo milk
Dash of cayenne (add more to your liking if you want)
1 tsp paprika
Salt and pepper to taste
1 cup of cream
3 egg yolks (mixed with cream mixture)

Brown the butter and lobster meat first
Scald the homo milk before adding to lobster meat

Add spices

And then the egg yolk + cream mixture

Do not add the egg yolk without mixing with cream first as the egg will cook on contact with the hot mixture and you will have to start over.

You don not hand mix this one as you do traditional bisques as the bite size potions of lobster really are the main feature.

Serve this with a chilled buttery Chardonnay.

This is my Dads recipe that he created based on a lobster soup and lobster Newburgh recipes. He removed the sherry as it totally changes the recipe and becomes less of a buttery lobster flavour.

He made it every Christmas at his "Dad Dinner" celebration for Christmas festivities. We continue this tradition every year as one of our memorable Dad moments.
