3 tablespoons butter
1/4 cup chopped fresh mushrooms
2 tablespoons chopped onion
2 tablespoons chopped celery
2 tablespoons chopped carrot
14.5 ounces chicken broth (can - not homemade)
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1 1/12 cups half and half cream
1/2 cup dry white wine
1/2 pound cooked lobster meat

Use soup mixer to blend.

I use 1.5 pounds of lobster meat and mix soup with half the meat and then add the rest so you have larger chunks of lobster in the Bisque.
Save the little claws to plan every on top of the individual servings of soup for presentation.

I usually double this recipe. It is also delicious the next day.

Add additional salt and pepper afterwards to your liking.

Serve with warm baguette.

This recipe was created after the Draper Bisque. It is a more calorie friendly Bisque than the original. We like this one since most Bisques use tomato based recipes and the tomatoes really dominate the flavour and we don't like that. This one is a better choice for those on diet programs.
