4 slices bacons, chopped into bite sized pieces
4 large head garlic heads, outer paper shell removed. Top third of heads cut off.
4 garlic cloves, minced
3 pounds bone in, split chicken breasts, trimmed and halved crosswise
Salt and pepper
1 onion, chopped fine
1 red bell pepper, stemmed, seeded and chopped fine
1 Tbsp all-purpose flour
1 1/2 chicken broth
1/2 cup dry white wine
2 bay leaves
2 whole cloves
1/2 cup pitted Kalimantan olives, chopped
1 Tbsp fresh lemon juice
2 Tbsp chopped fresh parsley

Cook bacon in a Dutch oven over medium low heat until crispy, about ten minutes.
Using a slotted spoon, transfer bacon to a paper towel lined plate. Set aside.
Place garlic heads cut side down in pot and cook over medium low heat until golden brown, about 3 minutes.
Transfer garlic heads to a plate.
Pat chicken breasts dry with a paper towel.
Season chicken with salt and pepper, both sides.
Heat fat left in pot over over medium heat until just smoking.
Add half the chicken to pot, cook until golden brown on both sides, about ten minutes.
Transfer chicken to same plate as the garlic and repeat with the remaining chicken.
Add onion and bell pepper to pot and cook over medium heat, stirring occasionally, until vegetables are softened 5 to 7 minutes.
Stir in minced garlic and cook until fragrant, about 30 seconds.
Stir in flour and cook for about a minute.
Whisk in broth, wine, bay leaves and cloves. Stir in any browned bits.
Return garlic heads and chicken along with juices to the pot.
Bring to a simmer, cover.
Cook covered for about 20 minutes. Chicken should register 160 degrees.
Transfer chicken and garlic to a platter and tent with aluminum foil.
Discard bay leaves and cloves.
Using a wide, shallow spoon skim off the fat from the surface.
Add olives.
Return sauce to a simmer and cook until slightly thickened 4 to 6 minutes.
Off heat, stir in the lemon juice and season with salt and pepper to taste.
Pour the sauce over chicken and garlic on the platter.
Sprinkle with chopped parsley and bacon pieces.

Jupiter is an odd name. But Marlene went to Jupiter, Florida a lot in the winter. I'm assuming the recipe is from there.
