Red Sauce
2/3 bottle Spaghetti Sauce
2 pounds lean Ground Beef
1 large Onion
Half flower of Garlic
1 Green Pepper, cubed
1/2 Yellow Pepper, cubed
1/2 Red Pepper, cubed
1/2 Orange Pepper, cubed
8-10 medium-large White Mushrooms, chopped
Salt and Pepper to taste

Combine in a large pot.

Cottage Cheese Mix
2 large tubs Cottage Cheese
1 small bundle Spinach, chopped
1/2 cup Mozzarella, grated
Salt and Pepper to taste

1-1.5 boxes Lasagna Noodles (boiled al Dante is best)

Directions:
1. In a large pot, fry minced garlic, onion and ground beef for 7-10 minutes.
2. Add cubed peppers and sliced onion and medium fry for 5 more minutes.
3. Add spaghetti sauce (cans can be changed out for homemade if you're really ambitious) and reduce to a simmer for 20-30 minutes. Salt and pepper to your taste.
4. In a large pot, bring water to a boil and cook lasagna noodles. I prefer al Dante as they will be baked as well. When cooked, put in large bowl of cold water, much nicer to handle when they are not hot.
5. Grate 5-6 cups of Mozzarella (mmmmmm...lotsa mozza) for layering and cottage cheese mix.
6. In a large bowl, mix cottage cheese, chopped spinach and 1 cup Mozzarella cheese. Add salt and pepper to your taste. Fold together until evenly mixed.

You will need a deep (3.5 inch depth min) pan.

7. Start with a thin layer of sauce on the bottom of the pan. sparingly spread a little mozzarella, then a layer of noodles, another thin layer of mozzarella than a hearty layer of sauce, a thin layer of mozzarella before adding the next layer of noodles.Do a thin layer so the lasagna on both sides of the noodles will be bound together with gooey goodness.
8. Next layer is the cottage cheese layer. Add it all, there's only one layer.
9. Add more noodles and cheese and then a thick layer of more sauce...a little more cheese then last layer of noodles.
10. On the top, spread a thin layer of sauce and a nice helping of grated mozzarella.
11. Cook on 380 degrees for 40-50 minutes.
