1 c finely chopped onion
1 T vegetable oil
2 cans(141/2 ounces) zesty diced tomatoes with green chilis,well drained
1 package (10 ounces) chopped frozen spinach, thawed and squeezed dry
1 package (8 ounces) cream cheese, softened
1 cup half and half
10 ounces shredded Monteray Jack hot pepper cheese
1/2 t salt
tortilla chips

Directions:
Directions:
In a large skillet, saute onion in oil until tender(about 5 minutes). Add tomatoes, cook over medium heat 5 minutes, stirring frequently. Add spinach.
In a large bowl, beat cream cheese at medium speed until smooth, gradually add half and half, beating well. Add spinach mixture. Add cheese and salt, stirring until cheese melts. Pour mixture into a 7 x 11 baking dish. Cover and chill up to 2 days.
