4 medium all-purpose Potatoes, peeled and chunked
3 Onions, diced
2 Celery Stalks, diced
1 Red Bell Pepper, seeded and diced
8 Garlic cloves, chopped
1 Capful Table Blend Mrs. Dash
½ tsp. Salt
1 Bay Leaf
1 ¼ pounds Cod fillets, but into 2” chunks
¼ cup chopped Parsley
2 tbsps. Fresh lemon juice (More to taste if wanted)
½ tsp. freshly Ground Pepper

Directions:

1. In a medium saucepan, combine the potatoes, onions, celery, bell pepper, garlic, Mrs. Dash, salt and bay leaf with 4 cups of water; bring to a boil. Reduce the heat to simmer, covered, until the potatoes are just tender, 15-20 minutes.
2. Transfer 2 cups of the vegetables and about 1 cup of the cooking liquid to a food processor or blender; puree.
3. Return the puree to the saucepan and bring to a simmer. Add the cod; cook until just opaque in the center, 3-4 minutes. Gently stir in the parsley, lemon juice and pepper; discard the bay leaf.
