Florida Hush Puppies Recipe

1 T flour
1 c fine white cornmeal
¾ tsp salt
2 T baking powder
1 medium onion, minced
1 egg
6 T light cream

Directions:
Directions:
Mix dry ingredients, add minced onion and egg and beat well. Add milk and beat until batter is smooth. Drop by tablespoon into 2” hot oil from side of a spoon. It will form “puffs”. Fry until golden brown. Lift out with slotted spoon and drain on paper towel or baking rack. Makes about 2 dozen “puppies”.

This recipe was given to me by Ellis Dickens, wife of former IU Head Football Coach Phil Dickens. I worked for him when he was FB coach (and 6-7 assistant coaches) in 1962 and then again in 1965 when he worked in the Physical Plant Dept at IU. This was when Larry was in Grad school. I called Coach from NC and asked if he could help me get job at IU for that year and he told me to come work for him again. I loved Coach and Mrs. Dickens. Shaw served these many times to the FB players at dinners
