One pound dry alubias (Spanish white beans) - (If using canned, use 2!)
5-6 guajillo chiles
Large can of tomatoes - 28 oz is best
½ onion
2 cloves garlic
Any combination of chorizo, italian sausage, bacon (purists say to use all of them)

Directions:
Directions:
Prepare the beans as you would normally, or just open two cans of them.

Prepare the sauce as you would Salsa Roja de Guajillo (see recipe).

Cook the meat/meats in a medium pan, shredding them as you go. Set aside.

Add the guajillo sauce to beans and meats and simmer for 20 mins.
