4-6 Zucchini
Sleeve of Ritz Crackers
1 stick of butter
Velveeta Mexican Cheese

4-6 Zucchini
Sleeve of Ritz Crackers (usually use 1/2 to 3/4 sleeve)
1 Can of Rotel
Velveeta Cheese (1/3 of large box)

Directions:

Slice zucchini (1/2" slices)
Boil zucchini until tender - do not over cover. Drain water
Put zucchini in microwave safe casserole dish
Slice butter over zucchini
Slice velveeta mexican cheese (thin slices) cover all of zucchini
Crumble ritz cracker on top
Cook in microwave until cheese is melted

Slice zucchini (1/2" slices)
Put zucchini in oven safe casserole dish
Pour Rotel on top
Slice velveeta cheese (thin slices) cover all of zucchini
Crumble ritz cracker on top
Cook at 350 for 30 minutes or until zucchini is tender
