1 1/2 Tbsp unsalted butter
1/2 Tbsp vegetable oil
1 medium onion finely chopped
2 celery ribs, finely chopped
1 carrot peeled and finely chopped
4 button mushrooms, sliced
1 quart chicken stock
2 cups long grained white rice
1 bay leaf
1 Tbsp chopped fresh parsley

Directions:

Preheat the oven to 400 degrees.
Melt 1/2 Tbsp of butter and 1/2 vegetable oil in a large sauté pan over medium heat.
Add the onion, celery, carrot and mushroom.
Cook 3 to 5 minutes, until the onion is translucent.
In a deep ovenproof dish combine the sautéed vegetables, the remaining 1 Tbsp butter, the chicken stock, the rice, the bay leaf and the parsley.
Cover either with aluminum foil or lid and bake for 40 minutes. Stir once or twice to bring the bottom rice to the top and top rice to the bottom.
