Two (15.5-oz) cans chickpeas, crushed into paste
2 garlic cloves, crushed
1/4 c tahini (sesame seed paste)
3 T fresh lemon juice
2+T (or to taste) extra-virgin olive oil
3/4 tsp salt
Cumin to taste

Directions:
Directions:
Place beans and garlic in food processor; process until smooth. Add lemon juice and olive oil to taste; top with cumin. This is better if made the night before serving so flavors can blend. Serve with vegetables, pita or toast slices.

This recipe was shown to me by a friend from Jordan. It is used in the Middle East instead of meats, and is both tasty and healthful.
