Vegetable Shortening and Cocoa powder for dusting pans
3 Cups Flour
3 Cups Granulated Sugar
11/2 Cups Cocoa Powder
1 Tbsp Espresso powder
1 Tbsp Baking Soda
1 1/2 tsp Baking Powder
1 1/2 tsp Salt
4 Large Eggs
1 1/2 Cups Buttermilk
1 1/2 Cups warm Water
1/2 Cup Vegetable Oil
2 tsp Vanilla Extract

Pre-heat oven to 350 degrees. Grease three 9" cake pans and dust with cocoa powder. Whisk together all dry ingredients in the bowl of an electric mixer. Add all wet ingredients and mix on medium speed for 2-3 minutes. Divide batter into pans and bake for about 35 minutes of until a toothpick inserted into the center comes out clean. Do not overbake. Cool in pans on rack for 10-15 minutes and then turn out to cool completely. Frost with Cream Cheese Cocoa Buttercream Frosting.

This cake is the most flavorful, moist chocolate cake that we've ever tasted and never lasts long in our house!
This recipe will also make two 10 inch layers if you don't have three pans.
