4 Tablespoons butter
4 Tablespoons flour
1/2 t. salt
1/8 t. pepper
1/2 t. celery salt
2 C milk
Few drops onion juice
2 C cooked shrimp
1 C cooked peas
Crackers

Directions:
Directions:
Melt butter and blend in flour, salt, pepper, and celery salt. Add milk and onion juice and cook until thickened, stirring constantly. Add shrimp and peas and heat thoroughly.

Or, if desired, omit celery salt and cook 1/2 C diced celery in butter before adding flour and seasonings. Add 1 Tablespoon diced pimiento or sprinkle freely with paprika.

Serve on crisp crackers.

*Since Bob was a big fan of celery, and we don’t remember seeing celery salt in Janet’s cupboard, it’s likely she chose the second option. And they both believed an olive wasn’t really an olive unless it was stuffed with pimiento, so another plus for the second option.

It should be noted that Uncle Tommy was a huge shrimp wiggle fan. As far as he was concerned, fine dining was any meal that began with a shrimp wiggle appetizer.
