1 c self-rising yellow cornmeal mix
1/2 c self-rising flour
1 c shrimp, chopped
1 tsp creole seasoning
1/2 c frozen onion, red & green bell pepper, and celery thawed (in the frozen veg. section)
1/2 c frozen cut okra, thawed and chopped
1 egg, beaten
3/4 c beer
Oil for frying

Directions:

Mix cornmeal and flour. Sprinkle the shrimp with the creole seasoning.

Add shrimp, onion mixture and okra to cornmeal mixture. Stir in egg and beer just until moist. Let stand 5 minutes.

Heat oil to 350F. Drop batter by level tablespoonfuls into hot oil. Fry, in batches, 2-3 minutes on each side until golden brown. Drain on paper towels and serve immediately. (keep warm in 225F oven until all are fried)
