1 medium onion, diced
5 T butter
2 14oz cans diced tomatoes
46 oz. tomato juice
3 -6 T sugar
3 chicken bouillon cubes
Ground black pepper
1 c sherry (optional)
1 1/2 c heavy cream
1/4 c fresh basil, chopped
1/4 c Italian parsley, chopped

In a large stockpot, melt the butter and cook the onion until soft. Add the diced tomatoes and stir. Add in the tomato juice.

The sugar will combat the acidity of the tomatoes. It is a critical ingredient. Start by adding 3 T and then taste. Continue adding until you are satisfied.

Add the chicken bouillon and let dissolve. Add in quite a bit of freshly ground pepper. Stir and heat almost to the boiling point. Turn off the heat. Add in the sherry if you are using. Stir in the cream and add the basil and parsley.

Serve the soup warm. YUMMY
