4 lbs pork back ribs, cut into serving-size pieces
3 garlic cloves, minced
1 tbsp sugar
1 tbsp paprika
2 tsp each salt, pepper, chili powder and ground cumin
Barbecue Sauce
1 small onion, finely chopped
2 tbsp butter or margarine
1 c ketchup
¼ c packed brown sugar
3 tbsp lemon juice
3 tbsp Worcestershire sauce
2 tbsp vinegar
1½ tsp ground mustard
⅛ tsp cayenne pepper

Directions:

Rub ribs with garlic; place in a shallow roasting pan. Cover and bake at 300º for 2 hours. Cool slightly. Combine the seasonings and rub over ribs. Cover and refrigerate 8 hours or overnight. In a saucepan, saute onion in butter until tender. Stir in the remaining sauce ingredients. Bring to a boil. Reduce heat; set aside ¾ c. Brush ribs with some of the remaining sauce. Grill, covered, over medium heat for 12 minutes, turning and basting with sauce. Serve with reserved sauce.
1) I make up a double batch of sauce because I like the ribs juicy and they cook in it. I don't grill them but you can.
2)I cut the racks in 2 so there are about 5-6 ribs on each piece.
3) When it says grill I put the ribs in a large roaster not overlapping each other covered in sauce and slow oven, 250º for about 2-3 hours. Turn the ribs about half way and keep spooning the sauce over them. I use baby back ribs and remove he membrane off the back of them.
