4 turkey wings (3-4lbs)
2 med onions, peeled and quartered
1 cup water
8 cups chicken broth
2 medium carrots, cut in chunks
2 medium celery ribs with leaves, cut in chunks
4 sprigs of fresh thyme or 1 tsp dried
2 tbsp butter
1 tsp fresh black pepper

Directions:
Heat oven to 400° C. You’ll need a large roasting pan.
Put wings in pan. Add onion and roast 1 ¼ hours or until wings are browned.
Put wings and onions in a 5-6 quart pot. Add water to roasting pan and stir to scrape up any brown
bits on bottom. Add to pot. Add 6 cups of broth (refrigerate remaining 2 cups) carrots, celery and thyme. Bring to a boil, then reduce heat and simmer uncovered 1 ½ hours.
Remove wings when cool. Pull off skin and meat (save meat for another use).
Strain broth into 3 quart saucepan. Discard veg., skin and skim off fat.
Whisk flour into remaining 2 cups of broth until blended and smooth.
Bring broth in saucepan to a gentle boil. Whisk in flour mixture and boil 4-5 minutes to thicken. Stir in butter and pepper. Refrigerate for up to 1 week or freeze for 1 month, thaw for 2 days in fridge.
