1 cup sugar
2 cups whole milk, divided
3½ Tbsp all-purpose flour
¼ cup natural unsweetened cocoa powder
3 large eggs, separated
½ tsp vanilla extract

1 pinch fine sea salt
1 tsp cream tartar
2 Tbsp confectioners' sugar

1. Preheat oven to 500º.
2. In a saucepan combine sugar and 1 cup milk. Set aside.
3. In a bowl, combine remaining milk, flour, and cocoa, whisking thoroughly to combine, set aside
4. Heat saucepan with milk-sugar mixture over medium-high heat, until simmering. Slowly add milk-flour mixture, an stir
to combine. Bring to a boil.
5. Add egg yolks, whisking constantly until mixture come to a boil. Once mixture comes to a boil, immediately add
vanilla, and remove it from heat.
6. Pour mixture into baked All-American Piecrust. Set aside.
7. To make meringue topping, place egg whites in a nonreactive bowl. Add sea salt and cream of tartar. Using a
handheld mixer fitted with a whisk attachment, beat on high speed until frothy. Sift confectioners' sugar in a little at a
time, and beat until whites are glossy and hold stiff peaks when whisk is lifted.
8. Spoon meringue over pie, making sure it touches edges of piecrust. Bake until golden brown, 3 to 5 minutes. Let cool
completely on a wire rack before serving.
