3/4 cup water
1/4 cup soy sauce low sodium
3 tbsp mirin (use more if using brown sugar)
2 tbsp honey
1 tsp sesame oil
2 cloves garlic minced
2 tsp ginger freshly ground
3 lbs chicken thighs with skin and bones
3 tbsp cornstarch
3 tbsp cold water
garnish
3 green onions chopped
sesame seeds

Directions:
Directions:
Turn Instant Pot to saute. Add water, soy sauce, mirin, honey, sesame oil, garlic and ginger to pot and stir. Put in chicken thighs and immerse in liquid. Select poultry setting and set for 8 minutes. Allow 10 minutes natural pressure release. Remove chicken pieces with a slotted spoon to a baking sheet. Set Instant Pot to saute. Thicken with the cornstarch, water mixture and simmer 5 minutes to thicken. Brush chicken with sauce and place under broiler until browned if desired. Garnish with green onions and sesame seeds.
