1 onion, sliced
1 clove garlic, crushed
1/4 c olive oil
4 mushrooms, sliced
1/4 c butter
1/2 c (2 oz) prosciutto or other dark ham
1 tomato, peeled, seeded, and chopped
1 c cooked chicken, cut into strips
1/4 c sour cream
nutmeg, salt, pepper to taste

Green Fettucine noodles
2 T butter
Grated Parmesan

Directions:
Directions:
In a skillet, saute the onion and garlic in the olive oil until golden. Add the mushrooms and saute for 2 minutes. Add the butter, prosciutto, and tomato and simmer for 6 minutes. Stir in the chicken, sour cream, and seasonings and bring the liquid to a simmer over high heat, stirring. Remove the sauce from the heat and keep it warm.

In a large stockpot, boil the fettuccine in 3 quarts of salted water until it is just tender. Drain the pasta in a colander. In a serving dish, toss the pasta with the butter. Pour the sauce over and serve with grated Parmesan cheese.

It is quite hard to find green fettuccine noodles in the grocery store these days for some reason. Regular ones work just as well...but not as pretty!!
