1 1/2 lb eggplant
1/3 c packaged dry bread crumbs
1/3 c grated Parmesan cheese
2 eggs, beaten
2 T heavy cream
salt and pepper to taste
olive oil for frying

Directions:
Directions:
Trim the eggplant. Place in a foil lined baking dish. Place in 400F oven for about 40 minutes until it is very soft. Let it cool, peel it, and mash the pulp.

In a bowl, combine the mashed eggplant, bread crumbs, Parmesan cheese, eggs, cream, salt, and pepper.

Heat a griddle and brush well with olive oil. Drop the batter by tablespoons onto the griddle. Spread out evenly. Cook over moderately high heat for 2-3 minutes until underside is lightly browned. Turn the pancakes and cook 2 more minutes until lightly browned. Serve with butter! Makes about 16 pancakes.

These sound very weird but are very good!
