3 cups all purpose flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1 cup butter, softened
1/4 cup vegetable oil
2 cups sugar
2 tsp vanilla
3 large eggs
3 large apples (Granny Smith or similar tart firm apple), peeled and diced

1 T. Sugar in the Raw
1 tsp cinnamon

Heat oven to 350º F. Grease 10 inch bundt or tube pan and dust lightly with flour.
In a bowl, whisk together first 4 ingredients and set aside.
In mixing bowl, cream together butter, oil, sugar and vanilla until light and fluffy, about 2 minutes.
Add eggs 1 at a time, beating well after each.
Working in two batches, incorporate dry ingredients into mixing bowl.
Fold in apples.
Spoon batter into tube pan. Combine cinnamon and Sugar in the Raw and sprinkle over cake batter.
Bake until top is golden and tester inserted in cake's highest point comes out clean, about 60-70 minutes.
Allow cake to cool in pan for 15 minutes before transferring to a plate and allow to completely cool before frosting.
