Ingredients:
Ingredients:
4-5 boneless chicken breasts
1 bottle italian dressing
4-6 potatoes, baked
sour cream
milk
butter
shredded cheese
bacon bits

Directions:
Directions:

For chicken; place chicken breasts in a large dish/bowl. Pour italian dressing over chicken and refrigerate for at least 2 hours. When ready, grill chicken until done.

For stuffed potatoes; bake potatoes in microwave until tender. Once potatoes are done, split each in half lengthwise and let cool. Scoop potato out of each half and place in a bowl. Save potato skins. Add to bowl, sour cream, milk, and butter to taste and mix. Begin with small amounts and add additional amounts as needed. Potato mixture should be thick and more stiff than traditional mashed potatoes.

Scoop potato mixture into each skin. Top with desired amount of shredded cheese and bacon bits. Heat in microwave.

Personal Notes:
Matt and I made this meal regularly when first married. The chicken and potato "recipes" are our versions of the same from Stonehearth Restaurant where we both worked and first met.
