4 extra-large egg yolks
½ cup sugar
3 ½ cups coarsely chopped walnuts
Grated rind of 1 lemon (optional)

Directions:
Directions:
Preheat oven to 325º.

In a mixing bowl, beat the egg yolks with the sugar until very thick and almost white. Mix the chopped walnuts and lemon rind, if desired, into the yolk mixture.

Drop teaspoonfuls of batter onto ungreased cookie sheet, leaving 2 inches between them.
Bake for about 10 minutes, or until cookies are dry and firm.
Remove from cookie sheet when cool.
Makes about 40 cookies.
