10 lbs. cucumbers
12 medium onions
2 medium green peppers
2 sweet red peppers
1 cup pickling salt
water, boiled then cooled


Pickling Ingredients:
6 cups white vinegar
6 cups sugar.
2 tbsp. tumeric
2 tbsp. mustard seed
2 tbsp. celery seed

Directions:
Directions:
Wash cucumbers and cut into ⅛" slices.
Peel and slice onions thinly.
Wash peppers. Remove seeds and slice fine.
Combine vegetables in alternate layers in circles in a bowl and sprinkle each layer with pickling salt, using 1 cup in total.
Pour boiled, cooled water over vegetables to cover. Let sit overnight.

Bring pickling ingredients to boil, stirring, and simmer for 10 minutes.
Drain vegetables and discard water.
Add vegetables to hot vinegar brine and bring to boil.
Immediately pour into sterilized sealer jars. Seal tightly.
Store in a cool, dry place.
