Seafood Gumbo Recipe

2T butter
2T flour
1 large onion, chopped
2 cloves garlic, minced
1 med can tomatoes
1 can Italian tomato paste
1 can consomme
4 cans water
1 bay leaf
1 1/2 tsp thyme
1 1/2 tsp gumbo file
Seafood
salt & pepper
hot sauce

Directions:
Directions:
Melt butter over low heat. Stir in flour and blend well. Add onion and garlic; brown. Stir in tomatoes, tomato paste, consomme and water. Boil 15 mins, then add seasonings and simmer for 1 hour. Add as much seafood as you like. Season with salt, pepper and hot sauce to your taste. Serve over rice.
