1 can pineapple slices, juice
2 cups plus 4T butter, softened
2 cups light brown sugar, packed
2 cup confectioners sugar
6 large eggs, room temp
1 tsp vanilla
1 tsp almond
2 cups sifted plain flour
8 maraschino cherries

Directions:
Directions:
Preheat oven to 325º. Lightly grease a 10" tube pan. Drain pineapple, reserve the juice. Melt 4T butter in pan & pour it into the bottom of tube pan. Drop the brown sugar and 2 T of the reserved pineapple juice into the melted butter-sugar mixture. Stir until mixed well. Lay the pineapples over the sugar mixture in the bottom of the pan. Place a cherry in the middle of each slice of pineapple. Beat the remaining butter with the confectioners sugar in a large bowl until light and fluffy. Beat in eggs one at a time. Stir in vanilla and almond extract. Resift the flour and gradually add it to the creamed mixture. With the mixer on low speed, blend the flour until thoroughly combined. Drop by large spoonfuls over the pineapple and sugar mixture, smoothing the top. Bake for 1 hour and 20 minutes. Remove the cake and allow to cool for 10 mins before turning it out onto a cake plate.
