1 pkge (2-1/4 tsp) active dry yeast
3 c. warm milk, divided
3 large eggs
3/4 c. butter, melted & cooled to lukewarm
2/3 c. white sugar
1-1/2 tsp. salt
pinch of nutmeg - optional
1 tbsp. vanilla extract
4 c. (1 lb + 6 oz) all-purpose flour

In a small bowl, dissolve the yeast in 1/4 c. warm milk. Let stand about 10 minutes to activate yeast.
In a medium bowl, whisk the eggs, another 1/4 c. warm milk & melted butter. Add yeast mixture, sugar, salt, nutmeg (if using), vanilla & remaining milk.
In a large bowl, combine flour & the above mixture; combine with a whisk - small lumps are ok. Cover bowl with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour. Use a Belgian waffle maker to prepare waffles, following the manufacturers directions.
