2 pounds (about 6 medium) potatoes
1/4 cup finely chopped onion (I use more)
Salt to taste
1/8 tsp pepper
1/4 cup Italian salad dressing (I use Wishbone robusto, etc)
1/2 cup mayonnaise (lite)
1/2 cup chopped celery
2 hard-cooked eggs, cut up

Directions:
Directions:
Wash potatoes. Heat 1 inch salted water (1/2 tsp) to boiling. Add unpared potatoes. Cover tightly; heat to boiling and cook minutes until tender (30-35 minutes). Drain.

Cool enough so you can peel and cut the potatoes into bite-sized pieces. Combine in bowl with onion, salt, pepper and salad dressing. Cover and refrigerate for at least 2 hours.

Just before serving add may onnaise and toss well. Stir in celery and eggs.

I use the pressure cooker to cook the potatoes (8-10 minutes) and peel the potatoes before cooking them. They can get mushy, so you may want to plan accordingly.
