Ingredients:  
Veal & Pork cubes, just slightly smaller than a stew meat cube. Not ground. Have the butcher place on a wooden stick, should be about the size of a large chicken leg.
Salt & pepper
2 eggs
Sleeve of Ritz crackers, crushed fine.
1 Tbsp Butter
1 Tbsp Vegetable oil

Directions:
Directions:
Preheat the oven to 350 degrees.
Salt and pepper the mock chicken legs.
Mix eggs in a small bowl with a bit of water.
Roll out the Ritz cracker crumbs.
Dig mock legs into the eggs, coat all over.
After egg wash, roll the legs into the crushed crackers.
In a large skillet melt the butter with the vegetable oil.
Brown the mock legs in the skillet.
Put into casserole, add a little water on the bottom.
Cook covered at 350 degrees for one hour.

Trick is finding a good butcher who make up the legs on a stick and get the right size.
