2-3 lb chickens
1 c salad oil
2 large onions
2 large green peppers
3 buds garlic
1 small can tomato paste
1 quart can tomatoes
1 c water
4 bay leaves
salt
2 c rice
1 T vinegr
2 C canned peas
1 c suffed olives
parsely

Directions:
Directions:
1. cut chicken in quarters
2. heat the oil in large iron pot. Grind onions, peppers and garlic fine. Put in the oil to fry until onions are tender.
3. Add tomato paste, tomatoes and water. Add bay leaves, seasoning. Add chicken. Cover. Steam 45 minutes or until tender.
4. Add the washed rice. Turn heat very low. Keep covered. After 10 minutes, turn the rice carefully to cook equally. When almost done, add the vinegar and peas. mushrooms?
5. When ready to serve, take out the chicken. Pour the rice mixture in amount on a large warmed platter, arrange the chicken around the edge of the mount. Garnish with pimiento, olives and parsley.
