Cookie

Ingredients:
Ingredients:
1 cup butter, softened
1/3 cup white sugar
1 cup powdered sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon almond extract
2 3/4 cups cake flour (or 2 1/2 cups all-purpose flour)
2 1/2 teaspoons baking soda
2 1/2 teaspoons cream of tartar

Directions:
Directions:
Preheat oven to 325º. Spray a jelly roll pan (half-sheet - 13x18") with cooking spray and line with parchment paper (this makes cutting and removal easier, if you don't have parchment paper just grease pan well).
Cream the butter and sugars until light and fluffy. Add the egg, vanilla and almond extract. Beat well. Add the flour, baking soda and cream of tartar and mix until blended. With lightly floured (or buttered) hands, pat the dough into the cooking sheet. Spread it out even, leaving about 1/2" space around the side (the dough will spread when it cooks).
Bake for 10-15 minutes. Let cool then frost.
