6 slices of bread, cubed
8 eggs
1/3 cup sour cream (or use milk in the absence of sour cream)
2 cups grated cheddar or Mexican blend cheese
1 small can (4 oz.) chopped green chilies - OPTIONAL
1 lb. (16 oz) of breakfast sausage, browned and drained (we like the "hot" sausage)
salt and pepper to taste

Cube the bread slices and toss into a 9 x 13" pan that has been sprayed with non-stick spray. Beat the eggs and mix with sour cream (or milk); pour over the bread. Crumble the cooked and drained sausage over the mixture. Combine the grated cheese with the green chilies and sprinkle over the sausage layer. Refrigerated 6-8 hours or overnight. (You MAY bake immediately; however, it tastes better if left in refrigerator overnight before baking.)

Beat in a preheated 350 degree oven for approximately one hour.
