2 tbsp psyllium husk
1/2 cup coconut flour fine, fresh, no lumps
1 cup lukewarm water
1 tbsp olive oil
1/4 tsp baking soda 1/4 teaspoon salt
1/4 teaspoon salt (optional)

In a medium mixing bowl, combine the psyllium husk and coconut flour. Add in the lukewarm water, olive oil, and baking soda. Stir with a spatula, then knead the dough. Add salt, knead for additional minute. The dough is moist and it gets softer and slightly dryer as you go. It should come together easily to form a ball. If it is too sticky add psyllium husk 1/2 tsp at a time, knead for 30 seconds. Set aside 10 minutes to rest. Now the dough must be soft, elastic and hold well together, it is ready to roll.

Cut the dough into 4-6 even pieces, roll each piece into a small ball. Place one ball between two pieces of parchment paper, press with your palm and start rolling out as thin as you like. You can also use a tortilla press for this step.

Wipe skillet with olive oil, but do not leave any in skillet or the bread will fry. Warm a skillet to medium. Lightly toast on each side for 2-3 minutes to desired color.

I used a cast iron skillet heated on a gas stove on 3 1/2 - 4.
Store in pantry covered for up to 3 days, in the refrigerator for 5 days.
