4 c. sliced yellow squash (about 1/2 inch thick)
1 onion, chopped
1 green bell pepper, chopped
1 can cream of chicken soup
1 c. sour cream
8 oz. shredded cheddar cheese
1 box stove top stuffing (I like cornbread variety)
salt and pepper

Directions:
Directions:
Put vegetables into a sauce pan. Cover with water. Simmer uncovered until tender, approx. 20 minutes. While vegetables are simmering make stuffing according to package directions. Drain water off the vegetables. To vegetables add soup, sour cream, cheese, salt and pepper. Stir. Pour mixture into an ungreased casserole dish. Top with stuffing. Bake uncovered in a 350º oven for 30 minutes.
