¼ tsp salt
¼ tsp garlic powder
¼ tsp chili powder
¼ tsp cumin
⅛ tsp oregano
pinch coriander
dash cayenne pepper
2 C diced potatoes
½ Tbsp canola oil
½ C shredded vegan cheese
2 Tbsp diced green bell pepper
2 Tbsp sliced black olives
2 Tbsp green onions, chopped

Directions:
Directions:
1. Preheat oven to 400ºF
2. Mix seasonings together
3. Place potato pieces in the bottom of a baking dish
4. Drizzle oil over potatoes and mix to coat
5. Sprinkle spice mixture evenly over the potatoes and toss
6. Cover dish with foil and bake for 30 minutes
7. Remove foil and bake an additional 15 minutes
8. Remove dish from oven and sprinkle first with the cheese, then the olives, onions, and bell pepper
9. Return uncovered dish to oven and bake 15 minutes or until potatoes are tender
10. Serve warm with vegan sour cream and guacamole
