3 Tbsp white wine vinegar
1 Tbsp water
1 Tbsp cooking oil
1 tsp toasted sesame oil
½ tsp ground ginger
½ tsp soy sauce
8 oz broken dried soba (buckwheat) noodles
1 C chopped, seeded cucumber
½ C shredded carrot
½ C chopped peanuts

Directions:
Directions:
1. In a screw-top jar, combine vinegar, water, cooking oil, sesame oil, ginger, and soy sauce. Cover and shake well
2. Cook soba noodles in an uncovered pot of salted boiling water until tender
3. Drain and rinse with cold water and drain well
4. In a large bowl, combine all ingredients and toss. Top with peanuts
